Interesting short film by the UN Convention to Combat Desertification at the bottom of this page.

Climate change is a complex, nuanced discussion, and the film advocates a particular point of view that I don't endorse 100%. But some of the discussion of soil management is relevant, with a modest stretch, to WD consideration of grape farming regimes. There's some cool imagery here, too. About six minutes.
 
Is dessertification the addition of sugar to otherwise savory dishes? I've been appalled by that practice for ages now.

In truth, it's more a question of continued irrigation to grow rice in the desert--the water keeps evaporating, but the minerals stay behind.

It is probably smarter not to grow rice someplace where it has to be irrigated by mined groundwater. Or to find a spot where there is a lower level of heavy metals in the soil.
