? ideas for wine with Korean short ribs and kimchee

I don't deserve to be taken seriously if I admit this, but kimchi and non-trocken Mosel Kabinett is something I enjoy very much and far too often.

I guess I must get my coat now.
 
Even Nahe Spatlesen, it seems to me would be great; i've done some experiments of this sort back when the Saam Bar had a good wine list (and better food).
 
01 JJ Prum WS Spatlese was the shiznit with Korean Beef Ribs about 3 weeks ago. I have heard since that the restaurant serves "Korean/Chinese" rather than "Korean" from someone qualified to tell the difference. FWIW, our ribs were sweet and a tiny bit spicy, maybe hoisin glaze or something similar with a touch of chili. Not sure if that's old school or not.

The young, crisp, simple red burg also worked well so I can see a Jura red too.

we went with a wide assortment of choices
2009 Fritz Haag Brauneberger Riesling Kabinett, alc 8%

Two Hitachino Nest Beers
1. "Real Ginger Brew", alc 8%...did fairly well
2. "XH" matured in Saki Casks, alc 8% ..very good

Dogfish Head Chateau Jiahu, ale brewed from honey and hawthorn fruit and fermented with grape juice, alc ??....a bit on the sweeter side but did well with extra kimchee...sort of a mead/beer mix kind of taste

"Taiwan Beer", alc 4.5%....generic lager type

earlier in the evening with cheese..
2007 Emmanuel Houillon (Maison Pierre Overnoy) Poulsard Arbois Pupillin....quite good,

and later
2007 Rhys Pinot Noir Family Farm Vineyard...really singing
