I was curious because recent bottles of 2011 and 2012 JJ Prum have seemed noticeably less (as in not at all) sulphury/sponti-y than I remember young bottles from the '90s or early 2000s being.
 
I was writing a primer on sulfur chemistry, but ran out of time.

I bet Clark Smith would have a perspective on this, you should PM him and see if he'll comment.
