Pop and pour with cassoulet tonight. Delicious but still painfully primary.

Hold (and cover your eyes and ears and then hum profusely so as to blot out any thought of opening it soon).
 
Wasn't so keen one of the same opened a few months ago. Seemed a bit too ripe. Maybe not by CA standards, but by northern Rhone standards.
