I've kept these in cellar since original purchase on release. Opened them over the holidays and I'm amazed by the finesse and mineral generosity of each. Lovely, crimson-stony tastes with different degrees of amplitude and musicality. Bouquets all spilled into the room, especially Le Bourg. Wine like music in the woods, following along . Like straining fine red mineral striated fruits through a bunch of untidy wild forest flowers leaving perfume in my mouth. A suggestion of soil.

No hints of heaviness, only a fine bearing. Fine tension between fruit and acidity and tannins. Like a candle left burning in the room and then you remember and return to see it falter and fade into an ember in the dark.

Food with them: roasted chicken, swordfish, wild mushrooms, roasted winter squash. Good with all.
