They sandbagged it a bit. They claim a rose has 275 components, but they only looked at 10, 20, or 30-component mixtures from a group of 128. So a small fraction of the possible.
Their 128 compounds (http://www.sciencemag.org/content/suppl/2014/03/19/343.6177.1370.DC1/Bushdid-tableS1.xlsx) include several acids, but no tartaric or lactic.
