nrw: steak

about a week ago a friend picked up some bone in rib-eyes and we threw them on the grill. simple salt and pepper prep. the steaks were supplied by the meat hook in northern williamsburg; i know many here are familiar with tom mylan and his work.

this was, simply put, the best steak of my life. the texture, the flavor, everything.
 
One small advantage (if that is the right concept) to living in Texas is that we've made friends with a local rancher. She supplies us with her grass-fed beef, and it is simply wonderful. I flash-cook the NY Strips on a grill and they among the best foods on earth.
