Two reasons why you should age your wine

Two wines, old school in their own right, well-aged.

Domaine du Closel Savennières Cuvée Spéciale 1994. Makes the case for aging Savennières, giving it twenty years. Sometimes it doesn't work out so well, nut I've never had a problem with this wine. This one is upright, rich, laden and long, very long. Inside it is well-baked fruit, herbed, savoury - and very stony.

Quinta do Cotta Vinho Tinto Grande Escolha Douro, 1995. Fully mature, good to go; it's mostly about the fruit, which is well beyond primary. It has plenty of texture, soft tannins and rich dirt and a slight pinch of salt.

Is it Monkey-baiting season already?? Nice notes, Jeff. As you intimate, my experience aging Savennieres is spotty, with a number of oxidized bottles to show for it; I'm happy to hear about your wine, though.

Well-aged Savenierres that oxidizes, apparently, without going flat can be extraordinary.

Not enough travel on my part. Though I could use a good haircut. Last week I had a bottle of '99 Domaine Diochon Moulin-a-Vent, which kept on opening and opening and opening up all evening long.

i has one stood up in teh fatschloß. if teh fatsink hasn't done its worst when i get home, i will report.
