I have not been much lately, but many of my friends still live in HH, so this is parts own experience, parts what friends (who like similar things I like) have been recommending recently. Overall HH is not the most exciting food and wine place.
For fine dining these days Haerlin in the Hotel Vier Jahreszeiten is the clear favorite among anybody I know. Jacobs or Seven Seas do not get much love anymore.
"Wild" will be on many menus. Usually Landhaus Scherrer has good options in that category but you might want to call and ask. You need to be aware though that this was a very famous ** restaurant in the eighties and not much has changed (incl the quite hideous, though almost cool again, decor and most of the customers). Very traditional food, usually very solid cooking and a large wine list (online). Also rightly famous for their old school roasted duck. I like it once in a while, but some people hate it.
A new place I have not yet been to is OFF Club, which seems to be the latest attempt at bringing Williamsburg to HH. But both food and wine are supposedly very good at fair prices.
With regards to wine bars I need to ask a friend who has a very disorderly taste. Unless something has really changed very recently this is not a strong side of the city.
http://poletto-winebar.de is not bad, mostly Italian and German wines and the owner really knows his stuff (not so sure about most of the guests though).
