A nice match with Thanksgiving leftovers, though it took a couple of hours to blossom. Very peppery (black and white, not bell) and crisp, but with enough flesh to keep it from being austere and hints of celery, herbs, and red fruit make it both interesting and a little whimsical.

If you happen to be in Durham, this and the Baudry happen to be on the list at Rue Cler. Also, Pif and 2009 Cot. Just sayin.
 
Ditto re baudry rose, and grezeaux at Bayona. And in Cot we trust (by the glass even) at Commander's. I have seen some shockingly bad, scary bad wine lists here, but there are also some very fine ones, which given that pretty much everybody had to start over after Katrina, is very impressive.

D'oh. Was just there last week and had planned to visit Bayona as I have fine memories of '07 Le Mont Sec by the glass a few years back. However my hotel was in the warehouse district and the weather was intermittently poor, so I wound up at Herbsaint more often than not.

Most of the lists I saw were firmly in the scary bad category, particularly btg, including August.

So true. Ate their last night, long list, mainly terrible. BUT there was '13 CRB Pif and Lauer fass 12. Those saved the day, albeit at higher markups than one would think necessary. The food, although based on good ingredients, was largely overly gussied up. I would not recommend the place.

Herbsaint, however, was indeed excellent. Would love to go back. Ditto Cochon.
