I can second Wistub du Sommelier, we ate there last October.
In Strasbourg I loved La Cloche Au Fromage, the cheese restaurant from one of the best affineurs in France (and their store across).

One can/should just go with a cheese selection but also with some great warm cheese dishes. The cepes in cream and cheese were very nice.

In Colmar I love to drive up 10 minutes to Niedermorschwihr to visit the tiny store of Christine Ferber. Best jams in the world and also top notch baked goods and pate en croute. She also sells beautiful and very functional local terra-cotta dishes for baking and cooking.
The Le Fooding online guide has also lot of Strasbourg recommendations, especially some wine bars we had no time to visit.
And on the other side of the Rhein from Colmar there is Schwarzer Adler Oberbergen with sensational wine list (both depth and prices,
