OMG, while researching recipes for carbonade flamande I stumbled across this encyclopedic, erudite monograph on thickeners: click

The author, or compiler, depending on what you think of Internet Answers, was a culinary student in Halifax. One hopes he is a chef by now.

When I was at the mushroom place at the Ferry Building in SF last month, they had candy cap marshmallows. Never before had I had an urge to make marshmallows. Now, I am tempted.
