i've met phillipe more than once--super nice guy--humble, friendly, talented, world-class.

but i'm just through with wanking menus--just give me savoury comfort food, wines that speak of the grape, the person that made them, and the place they come from, along with the good company of convivial souls to sup with.

to borrow from aa gill, wombat spleen with creosote sauce is so yesteryear--yester-millennium. how about we just all have supper, and mebbe get a bit tanked by the time it's over?

The kumquat was in the beurre blanc and I'm guessing it was just a way of slightly exoticizing (and perhaps slightly sweetening) the sauce/menu, but with fairly minimal actual kumquat character.
 
There are pages all over the Internet favorably referencing a combo of kumquat and mango. In any case, this dish lived up to its visual splendor.
