Wine Terroirs - Franck Pascal

Patrick had Pascal's NV on the list at Gilt. I had it only once. I thought it a bit one dimensional and a bit too unyielding, but that was just that one bottle....
 
According to the article he's experimenting with light color/wavelengths to influence fermentations, among other things. Pretty wild approach!

Also at the end of the Pascal piece there is a report about the condition of groundwater in Champagne after decades (centuries?) of fungicide and herbicide use in the vineyards. Spoiler: it's not very good.
