A first for everything

What do you do in that situation? Send it back and order something else, or force yourself to eat it because your server is unlikely to understand?

Just a guess - but perhaps they are treated with water containing some allowed percentage of chlorine bleach?

It was a sufficiently spicy, flavorful dish that I just ate most of it.

But I was shocked, and saddened by the implication that the pumpkin cubes came out of a can or the freezer, or something.

It is either that or they were shipped from the other side of the planet. Even the best storing squash are going to be in pretty sad shape by spring.
