Jay,
That article appears to be from 2009 (did I read that wrong?).
Some of the most detailed work I've seen on phenolics comes out of Oz and I wonder if some of these theories might have changed in seven years. Some recent reading I've done seems to indicate some "adjustment" to the thrust of this article.
Regardless, the ending comments are on the money - if you like what you're tasting, don't change.
