96 d'Yquem is awesome. The one time I had it, the empty glasses the next day smelled better than 99% of the wines I've ever had.

Don't get the roasted beets and Chablis pairing at all. But while I'm lax on most pairings, I'm picky about my Chablis.
 
Christian, the Dauvissat La Forest Chablis, based on this sampling initially, is a bit atypical i.e. rounder, lusher, little or no minerality, more like other Burgundies but toward the end of the evening with time in the glass came to be a more typical Chablis...an interesting progression! In its initial profile (more like other Burgundies) it paired well with the beet dish...



When we chose to serve the beet dish, we were looking forward to its freshness and its being rather unusual. It was delicious.

And, yes, the Yquem was fine but might have lost a bit of its luster on this occasion trailing behind other such really fine wines.

This Potel was truly an excellent showing in every respect...all the right Burgundy components nicely situated.

Not my decision, but it was double (at least "double") decanted a few hours before being served. Even so, it was solid while retaining all of its charm. There should be no reluctance nor rush to open future bottles.

Really a classy Burgundy!
