I have been through the same thought process myself. The palate would indicate American, but the sources say French. Not having ever visited, I don't have more to add right now, unfortunately.
Yes. And I realized something right after posting; that the perception of dill is reported in ancient tasting notes as well. The importation of American oak prior to WWII seems out of the question.
