WOW: 1994 Domaine du Chevalier blanc

When aged white Bordeaux works out it really works out. Cream and white flowers in the nose. Ripe fruit with vibrant acid and powdery stones. The oak has retreated to a light caramel burnish that perfectly compliments the whole. This wine is very long and rich in the mouth but never goes over the top. Wish I had more.

A truly inspired match to pasta with arugula in a lemon cream sauce but also fine to just sip.

Bravo! Love when that works out. As a strange coincidence, I opened an '04 "Y", which I don't drink that often. No noticeable oak, some of those white flowers (the semillon?) and still very fresh, which, given its relatively modest age, is not surprising. And a very pleasant (to me) slight bitter almond flavor at the back end of the tongue. And then nice waves of acidity and ripe yellow fruit. But this is overall, lean and saliva inducing.

As Connell would say, needs another 20 years.

Btw, some sauteed yellow perch fillets would've been a fine addition to your pasta dish.
