I suspect you are right, Jeff.

Just as a tannic, alcoholic, spoofulated red wine is suitable for ... BBQ Water Buffalo

I am referring to matching chil(l)i hot food here.

And in terms of bitterness per se I like Italian bitters. Interesting that most of them have a good degree of residual sugar to balance.
