Atmospheric pressure and humidity play a much bigger role than seems to be commonly acknowledged (although wine panels for airlines are now a lot savvier about this, in an extreme example of pressure and humidity differences). And it's something neglected in most "wine education" since these two variables are not readily tractable in a classroom setting.
