West Country Leads? (Especially Bath and Cornwall)

I'll be spending a little time in the south western parts of England later this year: in particular Bath, Cornwall, Dorset, & Devon. Anybody have tips or suggestion for watering holes to seek out? I'm interested in everything from white-tablecloth fine dining with extensive wines lists to pubs with just snacks and excellent ale or cider.

If you find yourself in Bristol, check out Bar Buvette . Haven't been myself, but one of the owners also owns l'Auberge de Chassignolles in the Auvergne, and I had the chance to hang out with him for a few days last June. Buvette seems very Disorderly, in the style of 40 Maltby/P.Franco/Sager & Wilde.
 
No suggestions, but I still have sentimental memories of a planned trip to Cornwall that had to be cancelled at the last minute, 12 years ago. Have never been able to make there since. But it's on the list. Enjoy!
 
there are great neolithic stone mysteries in the land's end to st. ives area. google "men-a-tol cornwall". (yes, i know you can't eat them, but still worth the effort). i stayed in a farmhouse bed and breakfast between land's end and st. ives and took morning walks along the cornwall coast path down at the far end of the pastures atop the cliffs.

st. ives has a huge artist component and there is even a tate st. ives art museum. which, i expect, means a person should be able to find some good eats there.
 
Gerard and Nina Basset run the Hotel Terravina in the New Forest national park between Southhampton and Bournemouth, more or less in your direction. Haven't been there, but Gerard is a really nice guy, terrifically unpretentious for someone with his breadth of knowledge, lugging around a MW, MS, OIV MSc, plus multiple awards. Have never eaten there, but the menu looks good and it's sure to have an interesting cellar. http://www.hotelterravina.co.uk
 
Noted BJ. When we get back to PDX, i will see if we can tee it up -- although i usually get little say in what goes on the TV.

And speaking of PDX, are you and Mme L planning to be down in our provincial neck of the woods anytime soon? I know we couldn't recreate that magical (mosquito infested though it was) Good Fork eve, but PDX has more and more charming spots all the time....
