Fortmann says the biggest benefit to winemakers for this technology would be the ability to “[use the] raw materials to their fullest potential. If you could get the best flavors from your grapes by using a synthetic/modified yeast strain, why wouldn’t you?”

I could think of a few reasons why not...

I agree with you, Kevin.

And yet, it took just one little louse to knock almost all vines off their own roots and onto hardy American rootstock. If they'd had the meme, no doubt there would have been geeks then calling it Roots 2.0.
