Sunchoke "silk"?
The flowers are really too small to collect to make any threads from, perhaps this is from the stalk itself, because it sure isn't from the tubers. Help me understand, please.
 
Mark, good question (assuming you are serious). Maybe this is helpful.

Sunchokes are sometimes described as being nubbly.

sunchoke - sunflower tuber eaten raw or boiled or sliced thin and fried as Saratoga chips

nub·bly (nŭb′lē) adj. nub·bli·er, nub·bli·est Rough or irregular; textured: the nubbly surface of raw silk.

The silk thing makes even less sense now that an image is provided.

Anyways, you just have to love Romanesco's geometry -- pairs well with LSD.

Yes, I'm being serious. I harvest them myself sometimes and never would describe the tubers as "silky". They are more like a cross between a potato and water chestnut and crumble more when you fork through them. I was wondering which part of the plant could be thought of as silk.
 
Mark, the fried strips on top of the antelope are what the chef is referring to as "Sunchoke Silk". The dish was superb, by the way.

If you google sunchoke (and nubbly) you will find numerous comments referencing the silk aspect.

Maureen, the Domaine Robert Chevillon Nuits St Georges Vieilles Vignes '14 was a real delight. I really enjoyed the softness and freshness that complemented the good core of fruit and flavorful tastes. The smooth finesse offset its youthfulness in fine fashion. Since it's a superb buy at some places, I'm trying to find a convenient source to buy some.
