Question: why not?

I go out of my way to age this stuff (Boxler, Zind-H in all its varieties, Barmes-Buecher's Steingrubler ages wonderfully, even Trimbach's Ribeaupierre -- which I perceive to be less serious than those listed above- gains something with ten years in the cellar).
You're a better man than I am, Rangen Thann.

For anyone interested, the current HDH auction has a bunch of mixed Alsace lots that are huge, like 20+ bottles. Pretty much Alsace cellar in a box. I might put in some lowish bids. I'm paddle 504.

I've just begun to dabble in Champagne and get pretty excited by the evolution of a decent NV between day one and day three. News of 18 year-old bottles that are still immature arrive on my doorstep like reports from a galaxy far away ...

The wine that got me started on aging Champagne was a 1979 Comtes de Champagne opened by someone about 15 years ago. After discovering I couldn't afford the aged versions at auction I bought a 2 each of 1995 and 1996 and waited on the 1996.

The 1995 has been amazing from the get go and has only gotten better. I don't think it ever shut down. The 1996 did shut down but is drinking really well now and will only get better from now on IMO. Hard to believe it's now about the same age as that 1979 I drank all those years ago.
