Special dinner this evening -- sauteed foie gras/pears/apples, roasted bone marrow, and snow peas.

Oh yeah, we also had a wine -- Ch Beaucastel Chateauneuf du Pape '89. Partially disintegrated cork that had leaked, some ullage, slight edge browning, luscious forward clean bouquet, medium to full body, still good fruit and staying power, touched (read: delighted) all points of palate, every bit of what one would expect from this legendary wine, glorious. The Brett was under control? There was lots of variability with this wine, though my bottles were fine.

Mark, I offered up the word "clean" advisedly. And, yes, the variability with this bottling has been marked. One evidence is the cork in this bottle that was leaking and falling apart -- thank goodness for the Durand which was so handy in this case.

All of my bottles, while variable, have approached being or have been transcendent. This one tonight was a joy.

Had the Ch Beaucastel CNdP '89 again last night. Here is the note I emailed Marc Perrin about it...

Opened and double decanted, soaked cork (thank goodness for my Durand opener), heavy, thick, black sediment. Good color with hint of slightest browning at edge, generous bouquet, very full on palate with nice mellowness, impressive vitality for 30 years old, excellent staying power in the glass. Every bit as wonderful as this world-class wine should be.

Worked well with fajita steak and black rice salad.

After reading his thoughtful reply, it occurred to me that he probably has enough of this wine so that it is probably an every-day wine option for him.
