Another Huet query

To go with pate of foie, which Huet should I open:
-- 2003 Constance
-- 1997 1er Trie (any)
-- 1996 1er Trie (any)

Sell the '03 Constance and open either of the others with the foie.

Though the 1996 Le Mont 1er is among my all time favorite Huets I might lean towards the 1997 to pair with the richness of the foie.

On the other hand the 1996 will be the better wine.

Such a horrible conundrum to face.
