If Jim Cowan were a Hungarian, this is the skin contact wine he would make. Full disclosure: I’m not a huge pinot gris fan, and when the owner of Tovino in San Francisco suggested this, I wasn’t expecting to like it. My wife is of Hungarian ancestry, so we are easy marks for their wines. I am glad we were taken in, because it was fabulous. It looked like Poulsard in the glass, and had a lovely tart cherry note, perfectly dry and not the least bit reductive. Definitely will buy more.
