Alois Kracher Chardonnay TBA #7 Nouvelle Vague '00 En Magnum -- Amber color, sumptuous flavors, caramel notes, some apricot and orange, honeyed nuances, mild acidity, good length, mellowed out nicely. [E]

Quite a treat with the toasted apricot genoise, lemon ice cream, peach lavender coulis, pomelo tuile...

The key to great cooking, according to a chef I know, is taking a recipe then subtracting a few ingredients to arrive a clearer, cleaner, less muddled result. Clearly, the pastry chef never got that message.

I understand the concept here. But minimalism is just a doctrine, not an objective reality. I've had my share of good maximalist dishes in my time. Indeed, most mid-20th century French cuisine was pretty maximalist. It's mostly gone out of style now, though I still regularly cook from Mastering the Art of French Cooking. But style is just that.
 
In (perhaps only?) this case, maybe the proof's in the pudding, er cake. This was a very successful dish with the TBA.

Whichever of these adjectives might be applicable to a wine like the Saxum Syrah and the Harlan Estate...

I didn't particularly enjoy these two wines, especially the Syrah.

Got it. I was just wondering whether Guy Stout was involved somehow.
 
Interesting! I know Guy and any reference to him never occurred to me. In fact, a good friend of mine just went to work with him at the top level of Glazer's.

I wonder what Guy would objectively think about these wines.
