TN: The Virtual Tasting #7 (November 5, 2020)

After two or three uneven experiences with 2013 Arianna Occhipinti Nero d'Avola Siccagno, last night we opened the first of two 2014s (with homemade low-carb pizza). Liked it better than the 2013, its acidity being for the most part fixed, but did not get the sense that it would improve with age. Both 2013 and 2014 show 13% on the bottle.

Cauliflower crust?

Or is this another term for vegetables sauteed in tomato sauce?

The crust is made from almond flour and eggs. We've tried the cauliflower crust but I found it a bit yucky.

And if the nutty crowd appreciates waffles and pancakes, for breakfast I have me waffles made from almond flour and eggs. They're closer to normal waffles than the pizzas are to normal pizzas. Plus there's a zero calorie maple syrup on the market that is almost indistinguishable from the real thing. And butter is never a problem in low carb diets. Same for wine.

since the bored being so pedantic lately, you can't sautee something in a sauce. that would be a braise most likely.
