I don't really object to MSG, but I don't keep it around. MSG is the purified thing, the other ingredients have many other complex components.

The glutamate in MSG is the same as the glutamate in autolyzed fish, or autolyzed yeast in champagne or muscadet lees, or fermented tofu, or what have you, except that in MSG it has been purified away from everything else.
 
...and thus, the moral of the story is this - have a bottle each of nam pla and nuoc mam in the kitchen. Saline and savory of a different order.
 
Well, I was thanking Joe for his clarification of the distinction between 'natural' and refined glutemate. But you're right: thank you, too, and Gaja, as well.

I've never gotten the heat rush from nam pla, but there are lots of foods here which have Ajinomoto's msg in them and I can tell within a couple of minutes.

Eating uric acid is not related, I believe, to your body's inability to purge it (a.k.a., gout).

Try it, Joel. It's amazing what complex sugars and MSG can do together. I also used to drink Coca Cola with salt.
