Some years ago, my partner and I were driving through Connecticut. We stopped at a little roadside stand to buy some fresh tomatoes and other seasonal goodies. Anyway, I agree that the Le Fooding movement did spread that trend. But it might have been Senderens who preceded Iñaki in the uprooting-starred-resto-in-favor-of-bistro trend.
(Not that Senderens, the restaurant, is very down-homey, but it isn't Lucas Carton.)

Interesting, when did Senderens opens? If you go back to the 1980s my dear friend Chef Olympe Versini was the first Female Chef to get a Michelin Star and then a second and she gave it up to open a casual bistro around 1989.
