The most lovely bottle of Plein Sud I've been lucky enough to taste. CO2 spritz quickly disappears after a decant. All lovely dried flower petals, dirt and blood/iron on the nose. In the mouth it dances and spreads surprising light flavor everywhere. Mouthwatering acidity and raspberry and more iron. Really hard to stop drinking it. Even better with rancho gordo reboseros cooked with a couple dried chipotles. A trousseau to remember.
