Many thanks. My travel companion, The Chef, says she doesn't care if she never sees another duck egg sitting on a slab of pork for the rest of her life. This will help with that. (She is also deeply suspicious of heavily tattooed young men offering "comfort food." Down here in Asheville we have had a plague of these over the last year.)

I suspect you and the Chef would very much enjoy Annisa. No tattoos; few young men. Maybe none in the kitchen.

Annisa was our first pick from your list. The Chef, because the menu was adventurous; me because they poured Roland Champion by the glass. Unfortunately, not available on the night/time we needed (friends on a tight schedule) but it looks like rouge tomate will be a very acceptable consolation prize. Thanks again, everybody.

We are not anti-tattoo. Call it an unfortunate coincidence if you must, but it is a fact, at least in our little town.

I've had a full beard for 37 years. No fuckin' way is it coming off.

I also don't care a bit about tattoo'd chefs. The proof is what comes out on the plate. Pete, would you deny yourself what could potentially be the best meal of your life because of a chef's appearance? Yeah, I didn't think so.
 
Selecting against tattoos on chefs is pretty much just selecting against young ones. There may be something to choosing those with enough experience, but that happens well under the current tattoo cutoff.

Yeah, the beards will be much easier to remove than the tattoos when the next big trend (please let it not be piercings) rolls around.
 
Tattoos are fine. Beards are ok.

But, I think I'm going to have to draw the line at the combination of suspenders and handlebar mustaches.

I'd like to say that piercings are so last Tuesday. But they seem to be hanging on in there.
