Many thanks. My travel companion, The Chef, says she doesn't care if she never sees another duck egg sitting on a slab of pork for the rest of her life. This will help with that. (She is also deeply suspicious of heavily tattooed young men offering "comfort food." Down here in Asheville we have had a plague of these over the last year.)
