'99 beaucastel and '05 Servin Vaillons

1999 Chateau Beaucastel Chateauneuf du Pape, Rouge, alc 13.5%. tag reads $47.99....decanted for about an hour....a bit of clearing at the edge but still deeply colored...nose shows well with some terroir and garrigue....palate is layer upon layer of savory and mild sweetness.....still some moderate tannins...has really become more interesting....still youthful overall but drinking extremely well....did well with Beef Paprikash

while cooking
2005 Marcel Servin Chablis 1er Cru Vaillons, alc 13%.... a bit dark in color but amazingly rich and youthful...great texture and mouthfeel..drinking well.... no premox but some maturity that provides pleasure...

Stephen, I pulled a bottle the other night with the same results although my decant time was nearer zero than an hour. Carefully served at 60 degrees.

Really fine! Great food wine!

Recently had a badly premoxed 2007 Le Clos from Servin. Disappointing to say the least as I like this producer.

shouldn't drink and type...
earthiness was what I was thinking...fresh turned earth
 
I haven't had the 99 Beau for a year or so, but when I last did, I had the same experience I have had with every one made since 98--nice wines but never as distinctive as the Beaucastels made up through 94 or so. I had the 00 this past weekend and was confirmed in that view. I'll try them all again in some years and hope to be shown wrong. It used to be my favorite producer.

I would agree
we had the '78/89/90/98 and '01 together a few months ago and the newer ones seemed more "polished" and less interesting
