What are you going to drink tomorrow night?

Just stood up 1966 Brane-Cantenac Margaux, 2000 Chateau Carbonnieux Graves Blanc and 2011 Olga Raffault Les Picasses Chinon which probably didn't need too be set on end but hey, as long as we're standing up wine in the cellar.

While the wines are settling a leg of lamb is thawing to roast and serve with the reds but I'm not sure where the menu is headed for the Bordeaux Blanc--might just be a simple aged goat cheese.

All this Downton-esque pre-planning got me thinking about wine geekery and how enjoyable it really is to make a fuss over this stuff every now and then. So what's on your agenda wine wise this week? What's in the cellar that you're really excited about?

Hey, hey, lookit chu! That sounds fine, indeed, and is a good reason to fuss.

I'm headed out in a bit to Rebelle for a wine dinner with Hervé Souhaut, including older vintages of Ste-Epine, which is always a lovely wine.

I remember the first time I met the guy, at Valaire, and was startled by his lack of Ardèche accent. Turns out he's Parisian and used to be a philosophy professor. But he learned the winemaking thing through Dard & Ribo, so there is indeed that.

Otherwise, there might be something coming down the pike from Azay-le-Rideau later this week, but I will just knock on wood for the time being.

2000 Carbonnieux makes me smile & laugh, it's been so long since those days for me!

What about smoked salmon and crème fraîche?

Yeah, I still have a few hanging around. Someone once poured '64 (I think?) Haut Brion Blanc way back when and it was absolutely mind-boggling. Also have fond memories of '94 De Fieuzal. I like to drink them now and then, mostly on the younger side. Kind of curious how this 2000 is holding up.

Smoked salmon is a very good suggestion.

I've been enjoying Souhaut's '14 Gamay a lot lately. That dinner sounds like fun.

I have the two '14 Pinon Vouvray (couldn't find the Deronnieres) and Salvo Foti Etna Rosso '13 planned for later this week

There's an open bottle of Pignard 2012 Morgon in the fridge; that's probably going on the table tomorrow.

My home storage is still flush with Rhone wines from my recent trip so those are likely to stay in rotation with Loire, Beaujolais, and Sonoma wines for a while yet. Though there is a bottle of Ceretto 1988 Dolcetto "Rossana" that I want to try, but I need to think about what's the right food to pair with it. And how long ahead of time to open it.

Wonderfully enough, I pulled my last of two precious Robert Denis, 1995 Touraine Azay-Le-Rideau, Vignes de la Gaillarderie out of my cellar after holding on to it since forever. Very curious to see how it is.

One of my heroes.

We're in the closing days of our month in Violes. Tonight we're having slow cooked duck thighs with a Rabasse-Charavin Font d'Estevenas. Tomorrow, I'm making a cleaning out the fridge pasta with a 13 Eddie Feraud. Thursday we eat out. And Friday we're going to the TGJP for a CdP dinner while LBJ takes the IRT up to uptown USA.

Do tell, Prof. Salmis de cuisse de canard, or something less involved?

Mark Lipton

Country French home cooking. My own recipe but pretty basic. I sauté up onions and mushrooms, brown the duck legs, put all that and a bouquet garnis of thyme, rosemary and laurel leaves in a casserole with some sautéd garlic, a passel of red wine, a tablespoon of tomato paste and salt and pepper and slow cook it for 2 to 2 and 1/2 hours until the duck is good and tender (American duck takes less time; French duck is tougher to start with). And voila. No one is going to write home about this recipe but it is quite satisfying.

LCD SS does not have a pre-purchasing option for winegeeks?

Karen, my guess is nowhere near ready. The few I've tasted over recent years have been evolving at a glacial pace.

That's one of the "50 year wines", right?
