You've made a good point about millipore filtration vs chemex paper filters. The former, of course, can only be used after cleaning up the wine with a pre-filtration using DE and pads, or something similar. Obviously this whole process strips the wine of aroma and texture.
If brilliant the wine must be, filtration into a decanter using a chemex filter will certainly damage the wine less BUT that paper filter must be triple washed with hot water to eliminate off odors.
