Work visa guidance

We're hiring a new mead maker (business is good - too good), and we have some great applicants from Europe and South America. Has anybody here had experience with bringing in a skilled worker from outside the US? Has the I-140 process proven worth the effort, and what are the chances of success if the best applicant proves to be a foreign national?

Of the five applicants with a Masters in Enology, four are from outside the US, and they are the ones with the most experience.

The TN Visa categories under NAFTA are fairly extensive and would open up Canadian applicants for consideration. The process is stupidly easy but the visas require annual renewal.
