What type of wine should I serve with

Whole rockfish steamed with lemongrass in its belly and then dressed with a sauce of lime juice, fish saue,thai chilis, garlic, a bit of sugar and cilantro and thai basil

Please don’t send me shopping. I have lots of riesling from germany, alsace, and austria (altho much more from germany and those mostly have varying amounts of r.s.). Alsace mostly trimbach altho a bit ofboxler and some older z-h (don’t hate me). Also lots of huet from varying vintages mostly demi sec. some chardonnay based wine, Rhys, chablis, some lamy SA and puligny. 20112012 vatan.

Oh and vajta sparkling rose
 
I would go MSR/low alcohol. If Thai chilis will impart some heat, I would go with spatlese. Otherwise kab.

(The richness of) Boxler could also work but I still think MSR is your best bet.
 
Can't go wrong with Kab or Spat, but the lime in the dish should go great with the lime in the Trimbach. That would be my choice.
 
Btw, I should add that rockfish/striped bass is a sturdy, not delicate, white meat fish, so going with a bigger white is probably better than a lower alcohol Riesling.
 
Surpringly, I’m with Brad (sort of). A Huet Demi-sec would be my choice, even a somewhat youngish one. A more muscular Spät could also work.

Do you have any Huet Vouvray or Chidaine Montlouis petillant ? I'd go with that because of the liveliness, acidity and liminess of those bubblies that should go well against the lovely spices and citrus you are cooking with, plus the meatiness and chunkiness of rockfish...

Given that the ingredients list is very similar to a green papaya salad romarantin is obviously the way to go.
