They bottle once a month. The latest bottlings are best, in my view. And give it 2 years in bottle. Disclaimer: we work with them blah blah.

Ironically, they have trouble getting the AOC. Most of the neighbors block malo, and they think they have enough acidity without that intervention.

But, the Platonic forms of AOCs are still useful.
